Serve this alongside Grilled Cheese Burgers.

Chopped Veggie Salad

Ingredients

  • 2 tablespoons sweet relish
  • 2 tablespoons red wine vinegar
  • 4 tablespoons EVOO – Extra Virgin Olive Oil
  • Salt and ground black pepper
  • 1 head romaine lettuce, chopped
  • 1 English cucumber, thinly sliced
  • 1 red onion, thinly sliced

Yields: 4 servings


Preparation

In the bottom of a large mixing bowl, whisk together the relish, vinegar and EVOO with some salt and pepper. Add the lettuce and veggies to the bowl and toss to coat. Serve immediately. Serve alongside Grilled Cheese Burgers.
