vegetable soup with dumplings

any canucks out there that can recommend an alternative to "Jiffy" for the dumplings? I don't want to test products only to have them dissolve in the soup.

canned biscuits can be used too. may of put them in too soon. You add them to last 15-30 minutes.

I used jiffy and it came out great,we really loved it.

Jiffy is a very popular brand where I live. The cornbread mix always comes out wonderful and I use it. Haven't used the biscuit mix but I plan to when I make this recipe.

I'm not a canuck, but do you have "Bisquick" where you live? Their recipe for dumplings is fine & quick (no pun intended). But if you want one from scratch that is easy, try this:
1 cup flour
2 tsp. baking powder
1/2 tsp. salt
3 Tps. shortening
1/2 cup milk (half/half works fine)
1/4 cup shredded carrot (can be omitted)
1 tsp. parsley flakes

Sift flour, baking powder & salt together. Cut in shortening. Add milk, carrot & parsley, stirring until flour is moist. Drop dumplings into simmering liquid in 8 mounds. Cover. Simmer 15 min. with lifting cover. Serves 8

We, personally like the added carrot. But, if that's not your preference, just omit. Good luck. Hope this helps.

This recipe was my first Rachael Ray attempt....just made it this afternoon. Fantastic! And the jiffy mix works great..the dumplings did not dissolve into the soup.
